Responsibilities:
Perform skilled butchery, including cutting, trimming, boning, and portioning of pork, beef, poultry, and game using both traditional and modern techniques.
Develop and create meat products like; sausages, marinated and cured meats.
Ensure strict quality control by inspecting raw and finished products and maintaining compliance with HACCP and food safety standards.
Manage daily production operations, including scheduling, production planning, order fulfilment, and equipment maintenance.
Lead, train, and mentor production teams on butchery skills, food safety and knife handling.
Deliver product training and technical support to internal teams and customers, including customized orders to meet client needs.
Oversee inventory, stock rotation (FIFO), procurement coordination, and yield optimization to minimize waste and control costs.
Manage budgets and production targets, ensuring cost efficiency and achieve monthly production target to fulfil customers' demands.
Requirements:
Is a Certified Master Butcher - completion of a recognized apprenticeship and Master Butcher Certification, or equivalent
Min. 8-10 years of Professional Butchery Experience as a Master Butcher
